Recipe Wednesday {Chocolate Chip Mocha Cookies}

Chocolate, Chocolate, and Chocolate.

Sometimes we run out of things in PNG (surprise, surprise).  We've been out of powdered sugar for a while, so the first time I made these there was no frosting to go with them.  And they were good then.

We finally got some powdered sugar.  And now they're awesome.

Chocolate cookies, with chocolate chips, covered with mocha chocolate frosting...  Do you feel like you gained a few pounds just because you read that?  Sorry.  But not really.

Chocolate Chocolate Chip Mocha Cookies
prep time 20 minutes
bake time 10 minutes
makes 24-32 cookies

Cookie:
2 1/2 c flour
2/3 c unsweetened cocoa
1 t baking soda
1/4 t salt
1 c softened unsalted butter
2/3 c brown sugar
3/4 c granulated sugar
1 t vanilla
2 eggs
package chocolate chips

Preheat oven to 350 degrees.  Sift and stir together flour, cocoa, baking soda, and salt in a bowl.  Set aside.  Mix butter and sugars in a large mixing bowl until smooth.  Add vanilla and eggs one at a time until blended.  Slowly add in flour mixture until fully incorporated.  Fold in the chocolate chips.
Drop dough onto parchment-lined (or greased) baking sheet and press with fingers.  Bake for 10 minutes.  Allow to cool 2 minutes on pan, then place on a wire rack to finish cooling.

Frosting:
1/4 c unsweetened cocoa
1/4 c hot brewed coffee
1/4 c melted butter
1 t vanilla
3 c powdered sugar

Combine cocoa, coffee, butter, and vanilla in a bowl.  Slowly whisk in powdered sugar.  Stir until completely smooth and thick enough to spread.

Oh, the dough is really awesome to.  I most certainly did set some aside in my fridge to enjoy.

I just have one question for you: how do you bake with flour, cocoa, and powdered sugar without making a mess?  It's seriously impossible for me.
