Recipe Wednesday {Baked Oatmeal Muffins}

[except that it's on Thursday this week
because of internet troubles]

What a perfect solution to wanting a delicious [semi-healthy] breakfast and not having time to fix it!  I like to cover mine with yogurt and syrup.  Yummm.

Baked Oatmeal Muffins
servings:  24 (or more)
prep time: 10 minutes
bake time: 30 minutes

2 eggs
1 teaspoon vanilla extract
2 cups applesauce, unsweetened
1 banana, mashed
1/2 cup brown sugar
1/4 cup honey
5 cups old fashioned rolled oats
1 tablespoon ground cinnamon
3 teaspoon baking powder
1 teaspoon salt
2 cups milk
Optionals: raisins, walnuts, chocolate chips, strawberries, blueberries

Preheat oven to 350 degrees.
Mix eggs, vanilla, applesauce, banana, brown sugar and honey together in a bowl.
Add in oats, cinnamon, baking powder, salt and mix well with wet ingredients.
Pour in milk and combine.
Stir in optional items.
Spray 2 tins with cooking spray or use cupcake liners. (The liners worked much better for me)
Pour mixture evenly into muffin tin cups.
If using toppings add them onto the tops of muffins now. If using fresh or frozen fruit, drop it right into the batter.
Bake 30 minutes until a toothpick in center comes out clean.

I actually made 24 regular size and 12 mini size.  This recipe makes a lot.
